



Nothing screams weekend like a pizza.
Like most people, it’s one of our favorite foods.
Instead of ordering out, we decided to make a homemade gluten free pizza.
To make it a bit simpler, we picked up a can of sauce (we used Carbone’s Spicy Pizza Sauce, which we absolutely love) that we doctored up and gluten-free pizza dough flour (though we will teach you how to make both from scratch in a recipe to come!)
To get started, ensure you have the following ingredients for your sauce, dough and pizza. Of course, feel free to switch up toppings and herbs as desired.
This recipe makes two wholesome 10 inch pizza pies!

Gluten-Free Pizza Dough Ingredients
FLOUR ingredients:
- 2 1/2 cups of King Arthur Baking Company Gluten-Free Pizza Flour
- 1 1/4 cups of water, lukewarm
- 1 tbsp. of olive oil
- 1 tbsp. of sugar (we used natural cane sugar)
- 3/4 tsp. of garlic salt
- 2 tsp. instant yeast (we used Fleishmann’s Rapid Rice Instant Yeast)
- 3 leaves of basil

Mix all ingredients with hands in large bowl. Cover with plastic wrap and let sit for one hour on the countertop as it rises.
SAUCE ingredients:
- 1 jar of Carbone’s Spicy Pizza Sauce
- 2 cloves of garlic, sliced
- 2 large basil leaves, sliced (or 4 smaller ones)
Slice 2 cloves of garlic finely.
In a saucepan, combine olive oil and garlic slices with basil leaves. Let sauce cook on a low heat on stovetop for 20 minutes.

Let sauce cool on countertop for one hour. (Try to avoid putting hot sauce on dough!)
After one hour of sitting out at room temperature, put dough in fridge for 30 minujtes.
TOPPINGS:
- 1 sweet yellow pepper, finely chopped
- 3 cloves of garlic, finely chopped
- 5 yellow tomatoes, finely sliced
- 1 1/2 Scotch Bonnet mushrooms (feel free to use the mushrooms of your choice)
- 6 porcini mushrooms
- 1/4 buffalo mozzarella ball, lightly salted (*Note: this is all we had left! If you’d like to add more cheese, please do.)
Preheat oven to 500 degrees.
Place parchment paper about 20 inches x 20 inches on countertop.
Remove dough from fridge. Drizzle small amount of olive oil onto hands and knead dough thoroughly with fingers to make a 10 inch pie.
Take 2 large spoonfuls of pizza sauce & spread in small circles until about 3/4 inch from outer crust.
Add sliced buffalo mozzarella, then sliced garlic, tomatoes, yellow pepper, and basil leaves.
Drizzle olive oil directly onto pie.
Bake for 16 minutes.
Remove from oven. Let cool for 2 minutes and enjoy!

Repeat instructions for the second pie. Change up the toppings if you would like. We make the first pizza with what we had left of a buffalo mozzarella ball and used Organic Valley’s Shredded ‘3 Cheeses Italian’ atop the second pie. Add desired seasonings. We added Follow Your Heart Dairy-Free Parmesan Flakes.
